Simple Cooking Guidelines

If you are unsure how to cook your meat, here is a simple guide that should help you out;

 

Chicken dishes for oven bake.

60 minutes on 150 C or Gas mark 4

Examples of chicken dishes included are;

Chicken Fillets in a marinade

Chicken Roast

Spatchcock Chicken


 

Beef dishes for casserole.

Minimum of 90 minutes on 150 C or Gas mark 4. However to get the best result, we at Brough Butchers recommend that you oven bake the casserole for 2 hours.

 

Beef dishes for oven bake.

60 minutes on 160 C or Gas mark 4

Examples of beef dishes are;

Beef in an ale sauce

Beef in a black bean sauce

 

Beef dishes for pan fry

10 minutes in the pan. However we do recommend that you constantly stir your beef to ensure the meat is evenly cooked throughout.

Examples of beef dishes for pan fry are;

Small cuts of our 'Black Gold' steak

 

Lamb dishes for casserole

Minimum of 90 minutes on 150 C or Gas mark 4. However once again to get the best result, the slowing cooking method works the best. Brough Butchers recommends you oven bake you lamb casserole for 2 hours.

 

Slow roasting lamb portions

2-2 1/2 hours on 150 C or gas mark 4. The type of lamb portions we recommend for this type of slow roasting;

Quick roasting lamb portions


60-90 minutes on 160 C or Gas mark 5. The type of lamb portions we recommend for quick roasting;
