The humble breast of lamb, often sold in a variety of ways to make it a little more appealing!
Boned & Rolled, stuffed, cracked or cut into lamb ribs - it is the same item - a tasty and economic meat.
We offer it here 'cracked' that is given a few sharp blows with the cleaver to sever the breast bone but leaving the muscle intact, this way it roasts very well and does not shrink.
