Description
Sweetbread is the culinary and trade name for the thymus or pancreatic gland. The glands are sourced from Lamb, Pork and Beef (calf) carcases.
Lamb Sweetbreads are cut from the Thymus Gland, while calf or pig sweetbreads are taken from the Pancreatic Glands.
Since ancient times sweetbreads have been regarded as a delicacy meat. The gland's creamy soft texture has no fat or sinew and lends itself to quick cooking, grill, fry or barbecue (Kebabs).
Delicious with seasonings or rolled in breadcrumb.
