The Pigs hind hock is a meaty cut that is ideal for roasting. It makes a very interesting center piece for a dinner table and is an unusual but innovative meal idea. One that will have your guests intrigued and curious. Serve with fresh garden vegetables and couscous.

Cooking Advice

Best Roasted, should be well scored (a craft knife is good). Rub salt into the scored rind, sear to start and rub in demerara / brown sugar then slow roast. When cooked, drizzle honey over the piece and sear again to get the rind firm.
