Thick Skirt is also known as 'Goose Skirt' or 'Rump skirt' it is very lean, and gristle free.
Traditionally it is diced and used as an alternative to chuck Steak in casserole meals.
American chefs will cut the same steak in slices along it's length and BBQ / char grill the meat! I believe it is a very popular cut and an economic alternative to steak.
