Description
The British duck is a very good table bird. The meat is sweet and rich, the muscle is soft while the flavour is solid. Ducks are grown to an optimum weight of between 4-5 lb and serve 4-6 depending on appetite. Some 'game' ducks reach larger sizes, the meat is firmer and there is generally less of it.
